My tip: Grate finely and dose very sparingly – just a few shavings are enough to noticeably deepen a dessert or a sauce.
Origin & Story
The tonka bean (Dipteryx odorata) originally comes from South America and is among the most intense and versatile spices in the world. It is cultivated mainly in Brazil and Venezuela, where the seeds of the tonka tree have for centuries been used not only as a spice but also traditionally in medicine. In Europe it became known in the 18th century and was first used in perfumery before it took its firm place in fine cuisine.

Quality
My tonka beans come from Brazil. After harvesting, the beans are fermented, gently dried and carefully selected – a decisive process for developing the full, complex aroma. In my manufactory the beans are checked by hand and filled in small batches – for maximum freshness, quality and effect.

Tip from Tobias Funke
For me, tonka bean is the spice when things should turn quiet and deep. Finely grated into a reduction with port and veal jus, it brings length and warmth to the sauce. With pickled pumpkin or celery too it provides a surprisingly soft, elegant seasoning.
