Origin & Story
In my 2-star restaurant we introduced a dedicated bread course – a deliberate moment for attention and appreciation. We season our sourdough bread with, among other things, Schabzigerklee (blue fenugreek). The herb adds a herby, slightly hay-like note reminiscent of alpine freshness. Schabzigerklee has long been used in Swiss cooking – in cheese or bread, for instance – but was barely noticed for years. Unfairly so, because its aroma brings depth without ever being dominant.
Highlights
Only the tender leaf parts are used, carefully rubbed. The aroma is delicately tart, slightly bitter, with hints of hay and meadow. Schabzigerklee is ideal for flavouring doughs, cheese blends or dips – especially combined with dairy products. Processing is single-batch at Manufaktur Funke. The exact cut quality remains my secret.

The Schabzigerklee comes from controlled cultivation in Germany. Only green, fresh leaves are processed – no technical aids, no additives, no anti-caking agents.
