My tip: Sprinkle only just before serving – that way the pyramids stay whole and give a fine crispness with every bite.
Origin & Story
The Greek coastal region of Macedonia is among the most tradition-rich salt landscapes in Europe. On the Thermaic Gulf – part of the north-west Aegean – sea salt has been harvested since antiquity. The region's natural conditions, with a warm climate, low rainfall and clean seawater, allow for particularly pure salt production.
Alongside classic sea salt and fleur de sel, a pyramid-shaped flake salt is also produced there today – a process that combines technical know-how with traditional handcraft. It is a product of regional origin that should not be confused with the better-known salt flakes from Cyprus.
Highlights
The pyramid salt forms through the controlled evaporation of purified sea brine in open stainless-steel pans. Through temperature control and salt content, small, hollow salt pyramids form on the surface. The structure is thin-walled, light and with a natural breaking edge – ideal as a finishing salt.
In taste the salt is mild, mineral and pleasantly restrained. It dissolves quickly and is especially suited to seasoning at the table. Visually it convinces with its clear, crystalline geometry – every grain a one-off.
Quality
Only all-natural sea brine is used for production. Before evaporation, the water is freed of sand, shell fragments and other particles via a filter system. The entire process takes place without additives or technical aids.

I use the pyramid salt right at the table – on fresh bread with olive oil or over grilled vegetables. The structure stays intact, and the salt releases its aroma at exactly the right moment.
