Our Piment d’Espelette AOP from the Basque Country has been awarded the gold medal several times and thus ranks among the very best from this region: finely ground, fruity-warm and mild (approx. 1,000–3,000 Scoville). It brings well-balanced seasoning and is especially suited to seasoning to taste and as a finish, as in a starred kitchen – my absolute favourite.

My tip: I sprinkle Piment d’Espelette over poached eggs or stir it into whipped butter; on steamed fish I add it only at the very end.
Origin & Story
Piment d’Espelette comes from the village of Espelette of the same name in the French Basque Country, near the Spanish border. The variety Capsicum annuum var. Gorria has been cultivated there under strictly controlled conditions since the 17th century, sun-dried and traditionally ground. Since the year 2000 the name has been protected as an AOP (Appellation d’Origine Protégée).
Piment d’Espelette stands out not through extreme heat but through aromatic balance – at 1,000 to 3,000 Scoville it sits in the mild range and is therefore especially prized in fine cuisine.
Highlights
Finely ground, fruity, warm and elegant – the aroma profile recalls ripe peppers, tomato and a subtle smokiness. The heat is restrained yet noticeable and develops softly and evenly. The Piment is especially suited to seasoning to taste and as a finish. Processing is done single-batch at Manufaktur Funke. The origin is AOP-certified, the quality uncompromising.

I like to sprinkle Piment d’Espelette over poached eggs or stir it into whipped butter – and on steamed fish at the end it brings depth without overpowering the dish.
