My tip: Only crush nigella seeds lightly – don’t grind them fine. That keeps the essential oils fresh and lets the aroma show its typical mix of nut, spice and fine herby structure.
Origin & Story
Nigella (Nigella sativa) has been cultivated for centuries in the Orient and the Mediterranean, where it is used both in the kitchen and in traditional medicine. Botanically it is not related to caraway or cumin, but forms a plant of its own with a characteristic aroma. My nigella seeds come from Egypt, where they are grown according to the strict guidelines of organic cultivation – with no synthetic pesticides, herbicides or chemical fertilisers. These traditional growing methods guarantee purity, sustainability and a spice that preserves the region's originality.
Highlights
Nigella has an unmistakable aroma profile: slightly bitter, nutty, with hints of thyme and pepper. With light toasting or crushing, the black seeds reach their full potential. They are excellent for oriental and Mediterranean cooking – whether in flatbreads, over grilled dishes, in yoghurts, chutneys or as a crunchy garnish on salads. Nigella also plays an important role in spice blends such as harissa or curry. The exact selection remains my secret.
Quality
The nigella seeds come from certified organic cultivation in Egypt. There they are traditionally sun-dried and processed without removing their oils. At my manufactory the seeds are carefully sorted and packed in small batches – for a natural, robust aroma with precise seasoning.

Tip from Tobias Funke
I use nigella deliberately where other spices would feel too smooth – for instance in an oil infusion for marinated lentils or as a contrast to mild cream cheese. For that I crush it lightly, without roasting it. That keeps its essential freshness intact: earthy, almost herby, with a fine nutty note and no heat.
