Hawaiian Black Lava Salt
Ab CHF 14.–
Hawaiian Black Lava salt Deep-black salt flakes with activated charcoal from coconut shells – mild-salty, clean-mineral and crunchy. Ideal for strong colour contrast in the finish.
· Category: decorative salt (sea salt with activated charcoal, Hawaii)
· Taste: mild-salty, clearly mineral; dry, crunchy texture
· Use: finish on fish, steak, vegetables, bowls, avocado, eggs; also for desserts (e.g. chocolate)
· Format: 160 g jar; 300 g stand-up pouch
My tip: Don’t cook it in – at the end scatter 1–2 pinches over pale components (fish, egg, avocado) for maximum contrast and crunch.
Decorative salt!
Origin & Story
Black Hawaiian salt carries a long cultural significance. On the island of Molokai this salt is traditionally obtained from filtered Pacific water that evaporates through pure solar energy. The crystals that form are mixed with fine activated charcoal – a natural mineral obtained from coconut shells. In Hawaiian culture, black salt stands for grounding, purity and the volcanic origins of the islands.
Highlights
Black Lava salt isn't just a visual highlight – its deep-black colour instantly brings tension to the plate. The crystals are light, flaky and have a pleasantly crunchy structure. In flavour it shows itself mild-salty with a subtle mineral note. The activated charcoal gives the salt a fine dryness and a clean mouthfeel. It goes perfectly with dishes of bold character, but also with simple foods, to which it lends visual and aromatic depth.
Quality
The salt is obtained by traditional methods – without refining, without additives. The activated charcoal comes from sustainable production and is worked in carefully, so that every crystal is evenly run through. No anti-caking agents, no artificial smoke, no colourings. Just salt, sun and nature. The even grain makes it ideal as a decorative salt or finishing component in fine cuisine.
Tip from Tobias Funke
"I reach for Black Lava salt when something needs to be special, visually and in flavour. On a piece of tuna, over an avocado or, quite classically, on a baked Kalua Pig – the combination of contrast and crunch is simply strong."
Recommended use
- As a finish on grilled meat, fish or vegetables
- For bowls, avocado, tartare or egg dishes
- In combination with butter, fermented chilli or lime
- On dark plates, pale ingredients or for targeted colour contrast
