My tip: I toast the cracked Cayenne chilli briefly in neutral oil – this brings out the fruity notes and makes the heat a little milder. Ideal for dips or warm sauces.
Origin & Story
Cayenne pepper is not a pepper but a pure chilli powder – named after the town of Cayenne in French Guiana. Today it is used worldwide as a hot yet finely dosable companion in warm cooking. Unlike many other chilli powders, cayenne is not bitter but clear, lingering and pleasantly warm – ideal for seasoning without masking.

We process carefully dried and destalked chillies, selected for their even level of heat. The powder is fine, even and instantly soluble. The heat sits at around 15,000 Scoville – clearly noticeable, but not overwhelming. The flavour is direct, with no off-notes. Processing is done single-batch at Manufaktur Funke. Tip from Tobias Funke
I use cayenne deliberately – not as the main heat, but as depth. In a black bean stew with cumin it brings a warm aftertaste that rounds off the dish without dominating.
