Origin & Story
Fennel (Foeniculum vulgare) is one of the very oldest spice and medicinal plants. It originally comes from the Mediterranean, but today is grown on a large scale above all in India – where climate and soil bring its essential oils to full development. Our seeds come from the Rajasthan region. Some of our batches are cultivated by farmers such as Ravi Pratap Singh or Deepa Kumari, who grow fennel traditionally on smaller plots – with great patience and precise knowledge of the right time to harvest.
Highlights
Our green fennel seeds come from the first harvest. They are particularly aromatic, of vivid colour and rich in anethole – the main component of the essential oil. Their taste is complex: sweet, savoury, slightly minty – with the freshness typical of fennel.
Quality
The fennel is harvested at full ripeness, gently sun-dried and carefully selected by hand. Only greenish, fully formed seeds make it into our packaging – with no brownish or bitter parts. The result is a clear, clean aroma that you taste with every use.

Tip from Tobias Funke
Fennel seeds only reveal their true strength after brief toasting. I like to use them best in lemon dishes – e.g. with pan-fried chicken in a light sauce, a little olive oil and plenty of fresh lemon. There the fennel brings not sweetness but clarity and depth.
