Curry Karnataka brings the aromatic diversity of South India straight into your kitchen – savoury, fresh, lightly sweet and with just the heat that leaves you wanting more. Coriander, cumin, fenugreek and fennel form the base, while green jalapeño, long pepper and black cumin add depth and power. Lemongrass, ginger and orange zest bring lively freshness, vanilla, mace and cinnamon flowers an elegance that sets your taste buds dancing. One spoonful of Curry Karnataka, and your mouth starts to water.

My tip: Curry Karnataka toast briefly in a dry pan and deglaze with coconut milk – this boosts depth, freshness and creamy aroma. A teaspoon of yoghurt at the end makes the curry especially rounded.

Origin & Story

Karnataka, in the south-west of India, is known for its diverse cuisine that unites influences from the regions of Kerala, Tamil Nadu and Andhra Pradesh. Typical of Karnataka are curry dishes that stand out for their complex, balanced aroma – with a mild to medium heat, fragrant spices and the subtle use of sweetness and freshness. For my "Curry Karnataka" I drew inspiration from the traditional recipes of this region, to bring the authentic taste of South India into your kitchen.

Highlights

This curry wins you over with a refined combination of savoury, fresh and sweet components. Coriander, cumin, fenugreek and fennel form an aromatic base. Green jalapeño delivers a restrained, balanced heat at around 8,000 SHU. Long pepper, black cumin and mustard seed add depth and complexity, while lemongrass, ginger and orange zest bring fresh notes. Cinnamon flowers, mace, cloves, cardamom and vanilla provide subtle sweetness and warmth. This personal recipe was developed exclusively by me and made solely at Manufaktur Funke – the exact recipe remains my secret.

Tip from Tobias Funke

For a perfect Karnataka curry I toast the curry blend briefly in a dry pan and then deglaze it with coconut milk. This blend harmonises especially well with pulses such as lentils or hearty meat such as lamb. A teaspoon of yoghurt at the end makes the curry especially creamy.
