My tip: Toast the cardamom seeds briefly and crush them lightly in a mortar – this releases the full aroma and combines perfectly with yoghurt, butter, marinades or warm sauces.
Origin & Story
Cardamom (Elettaria cardamomum) is one of the world's finest and most expensive spices. Its origin lies in southern India, where it has been cultivated for centuries. The state of Kerala in particular offers ideal conditions for growing it. There the plants are tended traditionally, the green pods harvested by hand and, after drying, carefully opened to obtain the precious seed. This keeps the full aroma unaltered.

The seed holds the entire concentration of the essential oils and is far more intense than whole pods. Its scent recalls eucalyptus, lemon, rose and a fine sweetness – an unmistakable, complex mix. Ideal for anyone who wants to dose cardamom directly, powerfully and precisely, without having to open pods first.
Quality
After harvest the seed is gently dried, carefully released from the pods and bottled single-batch at my manufactory. Additives, artificial flavours and technical aids are consistently avoided. Every batch is carefully checked – for maximum purity, freshness and flavour in concentrated form.

Tip from Tobias Funke
I like cardamom seeds best in the mortar – lightly crushed and briefly toasted. They're especially lovely in a marinade for chicken, combined with yoghurt, lemon juice and a little honey. For me, cardamom is the spice that bridges sweetness and savouriness like almost no other.
