Bündner Gerstensuppe Seasoning is my homage to one of the most honest Alpine dishes there is. A good barley soup needs no show – but it deserves the right base. Onion, smoked Malabar pepper, herbs and a hint of mace give exactly the depth that makes this classic soup rounded and warm without masking it.

My tip: add the seasoning right when you’re sweating the vegetables and toast it briefly – that way all the aromas develop immediately and stay cleanly embedded in the dish.
Origin & Story
Bündner Gerstensuppe (Grisons barley soup) has been one of the best-known and best-loved specialities of Graubünden for generations. Originally created as a warming, nourishing dish for cold mountain days, it is prized today far beyond the canton's borders. It's precisely this Alpine tradition that I take as the basis for my specially developed spice blend, to give the classic barley soup the authentic aroma it deserves.
Highlights
The blend combines aromatic onion notes, smoked Malabar pepper and robust garlic with traditional soup herbs like parsley, chives, thyme and lovage. Bay leaf and the fine spiciness of mace (nutmeg flower) add extra depth and refinement. Finely ground, ideally suited for stirring directly into soups and stews. The exact recipe remains my secret.
Quality
All ingredients are mixed fresh, single-batch and exclusively by hand. I use exclusively all-natural ingredients – completely without additives, technical aids, artificial flavourings or anti-caking agents.

Tip from Tobias Funke
It's best to add the spice blend right when you're sweating the vegetables and toast it briefly – that way the aromas develop optimally. For the classic Bündner Gerstensuppe, I also recommend smoked bacon or air-dried Bündnerfleisch, which rounds the dish off perfectly.
