Blackberry Pepper “Assam type”
Ab CHF 13.–
Blackberry pepper (Assam type) from wild growth in Assam: whole fruit clusters with a deep, smoky aroma and a fine sweetness. Slowly dried over a wood fire – ideal when spice and character are called for.
· Category: Pepper, whole
· Taste: smoky, woody, cocoa-like, slightly sweet
· Use: red deer, roe deer, game birds, dark sauces/red wine jus, chocolate desserts, cheese
· Format: 80g jar / 300g stand-up pouch
My tip: Toast briefly in a dry pan, crush coarsely in a mortar and use deliberately – e.g. on red deer with cranberries, over dark chocolate with a little olive oil, or in a jus with juniper.
Origin & Story
Piper mullesua
This extraordinary pepper comes from the north-eastern Indian region of Assam – a fertile, forest-rich landscape along the Brahmaputra River. Unlike cultivated pepper varieties, the so-called blackberry pepper grows completely wild, deep in the thickets of subtropical forests. It is harvested exclusively by hand, by experienced local gatherers who selectively pick the ripe fruit clusters in late summer. Its botanical classification as a relative of long pepper, combined with its purely wild growth, makes this Assam pepper a true rarity.
Highlights
The fruit clusters resemble small blackberries in shape and colour – hence the name. The aroma is deep, layered and surprising: on the nose it shows notes of dark wood, damp earth and smoke. On the palate a restrained heat develops, accompanied by a subtle sweetness, warm roasted notes and a slightly numbing tingle. The slow drying over an open fire also gives the berries a sweet, smoky character with hints of cocoa, cedarwood and black tea.
Quality
Our blackberry pepper comes from purely wild growth in Assam – without any form of cultivation or technical intervention. It is harvested by hand, then traditionally dried over a wood fire. Only fully ripe, aromatically dense fruit clusters reach the market. Every batch is all-natural, irregular in shape, yet consistently intense in aroma. Its limited availability makes it one of the rarest peppers in the world.
The best spices have always inspired me to create new dishes. Only the best is good enough to reach the very top – for you, in your kitchen.
100% natural. Just the way I use it myself, every day.
Tip from Tobias Funke
"For me, blackberry pepper is one of the most exciting pepper varieties there is. I toast it in a dry pan, crush it coarsely in a mortar and use it deliberately – for example on red deer with cranberries, roe deer with red wine jus, or over a piece of dark chocolate with olive oil. It harmonises particularly well with black garlic or juniper."
Recommended use
– red deer, roe deer, game birds, dark sauces
– Fruity ice cream, chocolate desserts, red wine jus
