Bhut Jolokia Chilli, a very hot chilli from Ecuador with over 1,000,000 Scoville. Its aroma combines ripe fruit notes of apricot and mango with a fine smokiness and an earthy base note. The heat builds up slowly and lingers for a long time.

My tip: A knife tip is enough. I use it sparingly in sauces, pastas, curry or Thai dishes as well as in braised dishes, wherever I want the extreme heat with its fruity, slightly smoky note. Be sure to keep out of reach of children.
Origin & Story
The Bhut Jolokia – also known as the Ghost Chilli – originally comes from north-eastern India, particularly the states of Assam, Nagaland and Manipur. In its homeland it has always been regarded as a medicinal plant and a spice with powerful effect. In 2007 it became the first chilli to be officially rated at over 1,000,000 Scoville units – and for years stood in the spotlight as the hottest chilli in the world.
It is now cultivated in other climate zones as well. The Bhut Jolokia we use comes from Ecuador – a location that offers stable heat, altitude and intense sunlight. These conditions promote not only the capsaicin content but also the aromatic development of the pods.

Bhut Jolokia belongs to the genus Capsicum chinense and delivers an extreme heat with a lasting effect: over 1,000,000 Scoville units.
But this chilli is more than just hot: it brings a distinctly fruity aroma with notes of dried fruit, smoke and dark earth. In cracked form it can be dosed precisely – for marinades, rubs or chilli dishes with ambition.
Unlike many hot varieties, the heat doesn't stay flat but develops slowly and lingers – accompanied by depth, not just heat. That is exactly what makes it so appealing.

Tip from Tobias Funke
I use Bhut Jolokia very deliberately. In a chilli with black beans, smoked paprika and tomatoes, a knife tip is enough – it brings not just heat but depth. Anyone cooking with it should respect it – then something great emerges.
