Banasura Highland Pepper from Kerala, India. The large peppercorns are aromatically dense, with a warm, slightly chocolatey note and fine heat.

  • Category: pepper, whole
  • Taste: warm, woody, cocoa-like, finely hot
  • Use: satay, beef, lamb, dark sauces, risotto, spiced butter
  • Format: 70 g jar, 500 g stand-up pouch

My tip: I use it coarsely crushed on grilled meat.

Origin & Story

Banasura pepper (Piper nigrum) comes from the highland of the same name in the southern Indian state of Kerala. Named after an ancient king from the Mahabharata epic, this pepper grows in one of the last bio-diverse regions of India. At over 1,000 metres altitude, the vines develop especially slow, large-grained berries with a complex spectrum of aromas. In India it is regarded as one of the noblest peppers of all – bold, full-bodied and long-lasting on the palate.

Highlights

The peppercorns of Banasura Highland Pepper are unusually large, thick-walled and deep brown. Its aroma is warm, slightly smoky, with hints of cocoa, wood and dark berries. It has a pleasant, finely integrated heat that sets in only late – ideal for dark sauces, red meat or spiced butter.

Quality

Our Banasura pepper is grown in small cooperatives in the highlands of Kerala and harvested by hand. After drying, it is sorted, cleaned and filled in small batches. The peppercorns stay uncracked, all-natural and full of essential oils – for intense aroma and perfect grinding in the mortar.

The best spices have always inspired me to create new dishes. Only the best is good enough to reach the very top – for you, in your kitchen. 100% natural. Just the way I use it myself, every day.

Tip from Tobias Funke

"This pepper has power and depth – but no harshness. I crush it coarsely and scatter it over grilled beef or into a satay sauce with peanut, soy sauce and lime. Its dark, slightly chocolatey notes harmonise perfectly with bold roasted aromas."

Recommended use

– Satay, grilled meat, beef, lamb
– Butter, dark sauces, jus
– Pasta, risotto, pepper blends
