Bamboo Salt from Korea

Origin & Story
Bamboo salt has a long spiritual and culinary tradition in Korea. It was originally made by Buddhist monks who filled sea salt into bamboo tubes, sealed them with clay and roasted them in clay kilns over several days. This technique is still used today: the salt is fired at temperatures of up to 1,500 °C – a process that transforms it, refines it and enriches it with important minerals. The aromas that develop and the altered structure make it a unique seasoning that goes far beyond what ordinary salt can achieve.
Highlights
Bamboo salt is unusually fine – almost like icing sugar – and dissolves instantly on the palate. In flavour it first shows itself powerfully salty, then soft and round with a slightly nutty, warm note. The roasting gives it a slightly alkaline character and a mineral depth that unfolds especially in combination with simple, unprocessed ingredients. It takes little to achieve a lot.
Quality
Our bamboo salt comes from traditional production in South Korea. The sea salt used is fired once in bamboo tubes – enough to transform it in flavour and structure, but without over-roasting. The pH value is around 9.9 – which makes it noticeably alkaline. It contains no additives whatsoever and is processed in small batches. The even grain is particularly well suited for use in the grinder or straight from a pinch bowl.
